1/2 cup olive oil
12 tortillas
12 eggs
Fry tortillas in oil without letting them brown Place 1 tortilla on each plate.
Fry two eggs at the same time then place them on the tortilla Cover them with ranchera sauce*.
Serve immediately
*Ranchera sauce
2 tomatoes
3 green peppers
1/2 chopped onion
1 clove of garlic
salt to taste
Peel tomatoes.
Grind tomatoes with peppers, onion and garlic.
Heat in frying pan until well cooked.
Season with salt to taste.
