Bean, Apple, and Fish Salad

    2 cups of cooked black beans (could be canned)
    2 apples
    1/3 onion
    3 tomatoes
    2 chiles serranos (optional)
    1 handful of cilantro
    4 tablespoons of balsamic vinegar
    1 1/2 tablespoons of honey
    8 tablespoons of olive oil
    1/2 pounds fish (sailfish, tuna, marlin or other meaty fish) cubed
    Salt and pepper to taste

Rinse the beans and set them aside in a large bowl.

Chop the onions, tomatoes and chiles and mix them with the beans.

Finely chop the cilantro adding it to the bean mixture.

Cube the apples. Add them with the other ingredients.

Cut the fish in cubes and steam or brown the cubes. Add the fish to the salad. Add salt and pepper to taste.

Chill. Serve as a salad or with tostadas.
